Every month I will be showcasing delicious raw food that it’s not possible for you to find in the shops elsewhere, what we are loving and recipes I am working on right now – and some raw classics that you may have seen from me before.

MARCH 2023 DISCOVERY BOX

This month it is in celebration of the seed. That’s right. There are no nuts in this month’s discovery box. That said, they are made in a kitchen where there are nuts so if you are nut sensitive, please be aware of this.

EVERYTHING BUT THE BAGEL FLATBREADS

Everything but the bagel flatbread is Mediterranean Flatbread’s flamboyant cousin. Another savoury bread solution for those following a raw, high raw or gluten-free lifestyle. These flatbreads contains all the toppings you’d find on your favourite bagel – without the gluten and…well, the bagel.

Made of raw, organic veggies and seeds. Gently dehydrated over 2 days, not baked.

Enjoy on its own or use as a canvas for open sandwiches or as a base for pizzas. Gluten free. Raw. Chewy, a bit like a flatbread really. 

4 large slices. (each 4½ inches/ 11cm square)

INGREDIENTS: sunflower seeds, pumpkin seeds, linseeds, red onions, tomatoes, WHITE SESAME SEEDS, BLACK SESAME SEEDS, nigella seeds, TAMARI (SOY), olive oil, oregano, thyme, rosemary, poppy seeds, garlic, Malden flaked salt.

THAI GREEN CURRY COCONUT CRUNCH
Gently dehydrated coconut with our own aromatic Thai green curry paste. All the flavour of an aromatic Thai green curry in crunchy raw coconut form. The perfect combination. Sprinkle on salads or noodles or enjoy as a snack. 80g. Resealable tub. 

INGREDIENTS (Allergens): Organic coconut, CERTIFIED GLUTEN-FREE TAMARI (SOY), maple syrup, garlic, tamarind, green chilli, onion, lemongrass, galangal, kaffir lime leaves, sea salt. 

ACTIVATED KIMCHI PUMPKIN AND SUNFLOWER SEEDS
Activated seeds get the kimchi treatment. Super munchy for scattering on salads. Made with Deborah’s own home-made kimchi. 100g. Resealable tub.

INGREDIENTS (Allergens): Activated sunflower seeds, activated pumpkin seeds, CERTIFIED GLUTEN-FREE TAMARI (SOY), Chinese leaf, red pepper, red cabbage, garlic, ginger, spring onion, sea salt.
 

BANANA AND CACAO NIB ACTIVATED BUCKWHEAT CRUNCHIES
If chunky monkey ice cream became a grown-up breakfast cereal. This is delicious for snacking, or serve with almond milk for a luxurious breakfast.

INGREDIENTS: activated and sprouted buckwheat, banana, cacao nibs, maple syrup, vanilla, cinnamon, sea salt.

CACAO SUPER SEED BAR

A delicious sustaining bar with cacao and notes of toffee in the white mulberries. Throw this in your bag for when you have a long day of adventuring.

INGREDIENTS: coconut, pumpkin seeds, SESAME SEEDS, chia seeds, white mulberries, raisins, Medjools, lucuma, cacao powder, carob powder, vanilla, cinnamon, sea salt

What is 'activation'? 

Activation is a process of long soaking nuts or seeds to remove the enzyme inhibitors so they can be more easily digested. These are then gently dehydrated below 105F for optimum nutrition. (105 degrees F is the point that essential life giving enzymes and nutrition starts to die off, hence all raw food is prepared under this temperature). Many people consider that activating nuts and seeds makes them more digestible and the nutrients more readily absorbed. The activation process can also prevent the feeling of sluggishness that many people feel after eating non activated nuts and seeds.
